Chen Weixin, director of the Guangdong Provincial Key Laboratory of Fruit and Vegetable Preservation, also said: "The loss rate of fruits and vegetables at room temperature in domestic supermarkets is as high as 20%, while fruits and vegetables transported and stored through the cold chain not only reduce the loss rate, but also preserve the nutritional value of fruits and vegetables to a greater extent."

The comprehensive cost of cold chain products is not high. Products passing through the cold chain link will increase the cost of production enterprises, which is a major obstacle to the development of the cold chain market.
